We’re proud to announce that our Apprentice Chef, Ollie Friedl has recently achieved an overall distinction in his NVQ Level 2 as a Commis Chef.  Ollie has been working hard over the past year refining his culinary skills and learning some advanced techniques from our chef team in the kitchen, including Sonny who has been mentoring him in recent months (pictured left).

Ollie has already made his mark on our seasonal menus, including the addition of:

  • Duck with cauliflower purée, sweet potato fondant with charred leeks and a blackberry jus (seasonal special)
  • Makeral with potato and dill salad, beetroot purée with wasabi mayo
  • Chilled pear and rhubarb crumble with ginger ice cream

He has had the opportunity to test his menu on a number of visitors, and has had glowing feedback on the individuality and attention to detail he spent on presentation.

We caught up with Ollie to see what he has to say about becoming a chef…

“I love the thrill of being busy.  When service is on, the buzz is amazing and it’s like scoring a goal.  I get a great deal of satisfaction from seeing a dish I’ve prepared being enjoyed by the customer.

I relish being listened to in the kitchen; we’re currently developing our next seasonal menu and the team are all putting ideas forward for dishes they think would work best.  We always love to use local produce and try to keep our carbon footprint to a minimum by working with local suppliers where possible who have the same philosophy.  I enjoy being given the freedom to try new things and always love to get other staff to give me feedback on my dishes.

Personally, I’d like to include more seafood in our menu as I’m particularly keen on sea-bass.  In fact, it’s my favourite dish to cook!

I want to thank Sonny and the team who have all taken my under their wing and mentored me with great patience.  Working at Patshull Park has been a pleasure to apprentice at; there’s always good banter in the kitchen and I’ve developed some great friendships.  The support I’ve received has been instrumental to my distinction and I hope that I can continue learning with a great team behind me.”
